Had I not had my website right now and in case I lived alone, I would eat this simple dish - noodles with spicy tofu - over and over again. This is the simple version of Mapo tofu aka. extremely hot and spicy tofu. It in fact has a bit of sweetness if you follow this recipe.
I am glad that I found green noodles made in Taiwan in Dun-Huang, an Asian grocery store here in Ghent, Belgium. I like Taiwanese noodles, as they have the right texture and won’t stick together after cooking it in boiling water.
The preparation of this simple dish can be done in minutes.
Green noodles (of course you can choose any noodles or spaghetti you desire)
Oil (any oil you desire)
Step By Step:
Boil the water until it really gets boiled. Cook the noodles until they are ready. Place a sieve on a container. Pour noodles in the sieve. Add about a tbsp. of oil on the noodles and stir it until it’s well mixed.
Sweet and Spicy Tofu
Tofu 400-500 g (Silken tofu is recommended; I use my own homemade tofu. You can watch my video about how to make tofu yourself. It tastes sooooo good.
Shiitake 4 - 5 pieces (Can be dried or can be fresh. The smell of dry ones probably are too strong for some westerners, in this case you can try to use the fresh ones. However the drie one has stronger sweetness.)
Fresh Sweet Corn 1 piece
Oil (any oil you desire, I use sunflower oil as I am almost running out of my sesames oil brought from Taiwan)
Vegetarian Stir Fry Sauce (This is my favourite. You can also use soy sauce, if you don’t have it at hand.)
Hot Bean Sauce
Step by step
Cut tofu into small pieces about 1.5 x 2-3 cm big. Set them aside.
Cut shiitake into small pieces. If you use the dry ones, you need to soak them in water first. Set them aside.
Cut sweet corn from the core, and set it aside.
Add about 2 tbsp. corn starch into water. Stir it and then set it aside.
Add oil to a frying pan, and then add a touch of salt to the frying pan. This can prevent you from being burned by the oil. (Still need to be careful)
Sauté the shiitake in the frying pan.
Put cut sweet corn into the frying pan.
Add cut tofu to the frying pan and then add well-mixed corn starch. You might need to add about a cup of water. Now wait until the sweet corn is well cooked. Stir it or add more water when necessary.
Add vegetarian stir fry tofu to your dish and hot bean sauce. Stir your lovely dish well. Mix them well. Then it’s done.
Pour it on top of your green noodles. Add some salad to your dish. Now you can enjoy a very green meal. What I used as salad is wild arugula (also called wild rocket salad) from my own plot.
Voila, now enjoy your green noodles with sweet and spicy tofu.
