Of course some of you might want to call it tropical flavor or Hawaii flavor. I call this Taiwanese flavor because we all experience “cultural shock” with westerners when we offer our “best local foods”. It can be very heartbreaking when you invite westerners to eat stuff from your homeland. For example, even just tea, whole leaves tea from the mountain of Taiwan which you won’t be able to find any of in Europe, but my ex-colleague asked me if she can add sugar. There are other examples that I just can’t write.
All right, off topic, some years ago when I was traveling back to Taiwan. My plane was delayed for 2 hours by the snow storms in Paris. A Belgian guy who’s waiting
next to me had a Chinese girlfriend. He told me the food prepared by his girlfriend tasted so bad that he just had to throw them out. I don’t know how bad it is, I think that’s more “culture shock”. But this guy traveled a lot to China, seems knows about Chinese business culture very well. So I don’t understand. Well, at least I am happy that Belgians are more open to new stuff; especially young people are more willing to try new eating experiences. This saves me a lot of energy to find flavor from the place where I was born and growing up.
On the other hand, I had good luck sometimes. I once offered what I think won’t be welcomed for my other ex- colleagues in Brussels. Out of my surprise, they ate my offering happily and asked me how to make that? What? How to make that? I only know about where I can buy it. What I offered is called “dried head of mushroom”. This is also very widely used in Taiwan as fake meat. You know what are eating is literally mushroom.
Ok, let’s back to the subject. This pineapple pie is the one which guaranteed 100% can win people’s heart. Traditionally it is not meant to be eaten like this. It is more a “cookie” with pineapple filling inside. So this is the simple or completely different version which is easy to succeed at.
Also I am very happy to tell you that with this recipe, we don’t need any fine sugar/ sugar replacement. The main ingredients are all kinds of fruits. We are after all going to eat this pie fresh, not to reserve this as pineapple jam, so I don’t use sugar. Besides, pineapple has a nice sweet flavor, so there is no need to use any sugar.
Pineapple 1 -2 (recommend to use fresh one or frozen fruits)
Lemon juice from 1 lemon
Passion fruit 6 pieces
1 Tbs Agar Agar
Pastry dough, 1 from your local grocery store
Step By Step
Cut your pineapple into small pieces and put them into the frying pan.
Add lemon juice to the frying pan.
Cook on medium heat.
Add agar agar.
Don’t cook for too long, don’t make it dry out. You don’t need to add additional water. This amount is correct. Cook or fry it for 15 – 20 minutes until it becomes jam-like.
Preheat the oven at 200 Celsius.
Put pineapple jams in your baking tray. Cut your pastry to meet the size of your baking tray. Place cut pastry on top of pineapple pie.
Put it in the oven. Bake for about 15-25 minutes. It depends on your local temperature and your oven. So please do check and see if it’s ready.
Now use your blueberries and Pomegranate to decorate your pie. I decorated my pie with helix shape with one blue berry and one pomegranate from the center. When it is done, I use passion fruit to fill in the shape.
